DMK The Kitchen offers a unique dining experience rooted in Balinese and broader Indonesian culinary traditions. From Indonesia’s classic Nasi Campur, Nasi Goreng, Sate Ayam and Gado-Gado, to Balinese authentic Lawar, Sate Lilit, and Tuna Sambal Matah—our menu captures the essence of island-style cooking infused with local ingredients. We are located in the heart of Paspaley Plaza, Broome WA, serving locals and tourists seeking bold, authentic flavours.
We are currently seeking a talented Chef to join our kitchen team and help maintain the quality, consistency, and authenticity of our dishes. This is a full-time position (38 hours per week).
Key Responsibilities

Plan, prepare, cook, and present authentic Indonesian dishes, including Balinese specialties, ensuring alignment with DMK The Kitchen’s quality and presentation standards.

Design and contribute to menu planning by creating new dishes and weekly specials, incorporating seasonal and locally sourced produce to enhance variety and customer satisfaction

Estimate and monitor food and labour costs to support effective budget management and maintain profitability.

Maintain consistency in portioning, plating, and presentation of all meals, ensuring quality control and adherence to established standards throughout the cooking process.

Supervise and coordinate daily kitchen operations, including food preparation, cooking, and workflow management during peak service times.

Ensure compliance with HACCP, food safety, and hygiene regulations by maintaining a clean, safe, and organized kitchen environment, and supporting internal kitchen audits.

Oversee stock management, including monitoring levels, ordering supplies, and ensuring proper receiving, storage, and rotation of ingredients.

Train, mentor, and guide junior kitchen staff, providing leadership in cooking techniques, food safety practices, and professional development.

Collaborate with kitchen team members and suppliers to maintain high operational standards and continuously improve kitchen efficiency.
Minimum Requirements

1–2 years of full-time experience as a Chef preferably in a Southeast Asian restaurant with a focus on Indonesian cuisine and Balinese dishes

Proficiency in traditional Indonesian cooking methods, including preparation of bumbu (spice paste), marinating, charcoal grilling, deep-frying, and steaming is preferred

Completion of a Certificate IV in Commercial Cookery or Diploma of Hospitality Management (or equivalent)

Strong knowledge of HACCP principles, food handling regulations, allergen awareness, and cross-contamination procedures

Demonstrated ability to work both independently and as part of a team in a fast-paced, high-pressure kitchen environment, especially during peak service periods

Excellent time management, communication, and organisational skills

Fluency in English is required; proficiency in Bahasa Indonesia is desirable
